A Marinade has to have a tenderising effect on the meat to which it is added and must take its flavour into the structure of the meat. The RAPS' range of Marinades is a very good example. Oil-based, with a unique emulsion system, they will improve the eating quality of any meat within a few hours whilst ensuring the flavour penetrates deep into the structure of the product. The minimum time to allow for marinating is 2 hours but the longer you leave the Marinade on the product the better it will be. However, RAPS' unique emulsion system allows these products to be extended during the cooking stage to give you a sauce to complement the meal, so if time is tight use the Marinade as a base for your own creation then add wine, cream, milk, or any liquid to extend the product. The best of both worlds!!
On the other hand, sauces have no tenderising effect on the meat but obviously still improve the quality of the finished product. Their job is to provide flavour and succulence with the meat.
